Abstract

Abstract. Introduction. This study develops a mathematical modeling methodology for the solar drying process of Jerusalem artichoke tubers under the climatic conditions of the Kashkadarya region, taking into account the physical characteristics and kinetic behavior of the drying process.

Materials and Methods. Freshly harvested Jerusalem artichoke (Helianthus tuberosus L.) tubers were selected as the research material, and a solar energy-based drying method was employed for their dehydration.

Results. Mathematical modeling is used to evaluate the effects of drying temperature, relative humidity, solar irradiance, air velocity, and drying duration on the moisture content of the product. An algorithm is proposed for calculating the principal drying parameters, including the moisture ratio, drying rate, effective moisture diffusivity, and activation energy.

Conclusion. The findings provide a scientific basis for reducing drying time and energy consumption during the drying of Jerusalem artichoke in solar drying systems under optimal temperature conditions.
