Аннотация
В данной научной статье изучена технология получения биоактивной добавки из кожуры граната (Punica granatum L.), широко выращиваемого в климатических условиях Узбекистана. Для максимального извлечения полифенолов, эллаговой кислоты, танинов и других биологически активных соединений были сравнены традиционная водно-спиртовая экстракция, ультразвуковая экстракция (UAE) и микроволновая экстракция (MAE). Антиоксидантная активность полученных экстрактов оценивалась методами DPPH, FRAP и ABTS. Технологии сушки–распылительная сушка и лиофилизация – были сопоставлены с точки зрения сохранения биоактивности. Полученные данные имеют практическое значение для оптимизации технологий производства высокоценных биоактивных добавок из кожуры граната.
